Robila som z jari cesnakové pesto, ale nenašla som si čas dať ho hneď na blog a potom už medvedí cesnak nerástol, tak som si povedala že o rok, ale ...robila som s ním niekoľkokrát pár receptov a je taký úžasný, že som sa rozhodla sa o moje tohtoročné 3 variácie podeliť.
I did this spring wild garlic pesto, but somehow I didn´t find time to write it on my blog and then it was no more growing of wild garlic, so I said to myself I will leave it for next spring , but... I did use my pesto lately in pasta cooking and it was so delicious, that I decide to share my 3 pesto variation with you even now.

I only collected leaves at the bottom of my basket, it was enough to make me 4 jars of pesto, which will last me the whole year. I know people dry it and grated it to use it as a spice or do other recipes, but on our secret place in middle Slovakia I have met people from Bratislava ( which dropped my jaw) and one lady had collect it full big basket of wild garlic, I think she has been there the whole day, but there is no need to take it all, just because it is for free. This is one line in Slovak people character I really would like to cure, if it was possible. I really hope that lady will use all her wild garlic this year.

Cesnak si umyjeme a na jednu dávku som použila 2 hrste nakrájaného cesnaku, 2 čajové lyžičky soli , 1 dcl (alebo 100 ml) olivového oleja. Dobre zmixujeme.
Washed and air dried wild garlic I sliced and for one recipe I used 2 hand full of garlic, 2 tea spoons salt, 1 dcl ( or 100 ml) olive oil. Mix it well.

Urobila som ďalšie 3 dávky, a k receptu som pridala 1 hrsť vlašských orechov. Alebo 1 hrsť strúhaného parmezánu. Ten orieškový je neskutočný.
I did other 3 portion, once I add 1 handful of walnuts. In other I add 1 handful of grated Parmesan cheese. That walnut one is simple amazing.

After I poured pesto in jars, I added on top 1 spoon olive oil for conservation. I store 1 jar in the fridge, the rest in freezer. Slowly I am using them up to cook all yummy dishes :-)
